This vintage is the result of an exceptional harvest that Carbon wishes to highlight. From the generous slopes of the Grande Montagne de Reims and the Côte des Blancs. Solar year in Champagne, 2015 is an opportunity to seize, smaller quantities harvested for an intense quality of flavors.

Tasting notes
This vintage offers you a slightly shiny and transparent color on a light gold. The character of Chardonnay is faithful and very identity, the first scents reveal white fruits, flowers on a slightly minty fatty support.
The intensity then becomes clearer towards yellow citrus, white flowers and a few hints of aromatic herbs. Finally, the density increases, we perceive the sap and the fine chalk.
The palate is creamy, velvety and noticeably honeyed. It asserts itself at its heart with a tension reminiscent of granny apple and green citrus. The finish is chalk powder and the lemony graphite perceptions are tasty.
Food and wine pairings
This cuvée will enhance a delicate recipe such as a scallop ceviche or a grilled red mullet fillet, marinated in thyme and olive oil.

Bright with a beautiful gold tint and concentration.
A bewitching and precise cuvée, expressing the marine universe, the pebble, the shell, the white flowers and the aniseed root environment linked to the fennel. The salty tension is palpable, a densification takes place and delivers noble flavors of butter, cream, praline then honey and mocha.
Delicate on the palate, this champagne has a natural fatty thickness. A gourmet flavor of peanuts, salted caramelized butter, pastries and fine woodiness. Energy, sapidity and precision.
Food and wine pairing
This cuvée will go perfectly with smoked salmon with tarragon, a fillet of gilthead sea bream with lemon butter sauce and fresh chives or a red tuna tartare with a cauliflower foam with green pepper and caviar.

An orange peel adornment. The first fragrances are dark: liquorice and nuts. The progressive light is tinted towards the very fine fruity red, the blend of pomegranate, wild strawberry and wild raspberry. Citrus fruits such as blood orange invigorate the sensations, they perfectly counterbalance the evocations of damp earth, clay and dried flowers. Next come fragrances of blackberry cream.
The whole is complex and racy, bitter orange peel, orange blossom, black tea and exotic pepper define a respected Pinot Noir of very high quality under a finely woody skin.
The palate is transparent, rigorous and finely fruity. With a semi-thick texture, its taste brings out the precise acidity of the skin and pulp of orange, mandarin and wild strawberry. The finish is pure and sapid.

This cuvée will enhance certain recipes such as a nems of smoked salmon spiced with Espelette pepper, a royal pavlova with cherries, rhubarb and ivory cream or a verrine of red fruits with mascarpone cream.

A wine of patience, breathing and aromatic unveiling take place gradually, it then unfolds with a large creamy and milky scope. The soul expresses the richness of butter, caramel, walnut and forest honey. Then the ballet of aromas parades: pastries, undergrowth, plum, mirabelle plum, fresh coffee and nougatine among others. Expression of an evolution where time does its work.
The palate, in turn, is milky, caramelized and biscuity. Beneath this ample texture, the pastry notes of grilled almonds line the flavors.
Food and wine pairing
The EB01 cuvée will go perfectly with a ceviche of scallops, grilled foie gras or a fillet of John Dory "en papillote" accompanied by a brunoise of vegetables.

This champagne offers a gourmet palette of candied berries and stone fruits. After a few seconds of intense sweetness, the sweetness gives way to the freshness and lightness of vegetal notes.
Ample, fleshy, the sweetness quickly gives way to acidity for a refreshing finish with notes of white flowers.
Food and wine pairing
A perfect cuvée to enjoy in summer, with your feet in the water, in a tall glass accompanied by mint leaves and fresh fruit. A "gastronomic" pairing with appetizers based on foie gras, tapas, but also with a cheese soufflé or a starter of fresh goat cheese, honey and nuts.
